A bitmap graphic created in Photoshop cannot be resized without pixelated or loss of quality. Illustrator gives your logo in vector object which is not part of a bitmap.
Means you can reshape and resize while maintaining all of its quality. You can create a logo in Photoshop but, Illustrator should always be your first choice.
